For the Brine:

3 or 4 pork chops (1 Kg.)
1 lemon
4 cups of water
⅛ cup of salt
⅛ cup sugar
1 tablespoon cumin seeds
1 tsp of Sichuan pepper (or black peppercorns)
1 tsp paprika
2 sprigs rosemary
1 bay leaf
For Grilling and Service:

4 tbsp BBQ sauce
2 tbsp oil (for greasing the grill pan)
Salt and pepper to taste
For Side Dishes:

500 g. of potatoes
2 tbsp butter
250 g. green beans
2 tbsp BBQ Sauce


Preparing the Pork Chops:

Rinse the pork chops under running water. Cut the lemon into two equal parts and rub all the chops with lemon juice. Let them stand for about 5 minutes and rinse again. Dry them with a kitchen towel.

In a large bowl, prepare the brine. Add water and dissolve the salt and sugar by stirring with a spoon. In a mortar, crush the Sichuan pepper (or black peppercorns) with the cumin seeds. Add the bay leaves and rosemary. Finally, dip the chops in this brine preparation. Cover the container and refrigerate for a minimum of two hours, preferably overnight.

Remove the chops from the refrigerator, drain the marinade liquid, and discard it. Dry the chops with a towel. Drying the chops before smoking speeds up the smoking process.

Seasoning and Grilling:

4. Sprinkle the pork chops with salt, pepper, and paprika. Rub the seasonings on both sides. Paprika adds a beautiful coloring to the chops, especially when they smoke. Then, coat the chops generously with barbecue sauce on both sides.

In the kitchen, heat a grill pan over high heat with diagonal stripes. Add two tablespoons of oil and wait until it becomes very hot. Place the chops on the grill, pressing them down without moving them using a slotted spoon. The goal is to achieve well-defined grill marks, which should take about 4 minutes.

Flip the chops but maintain their orientation inside the pan. Now, your aim is to create grill marks crosswise. Cook them for an additional 3 minutes and then flip them once more to cook on the other side.

Smoking the Chops:

7. Transfer the grilled chops to a greased tray. To smoke the chops, preheat your smoker to 110°C (230°F). Add your choice of wood chips, such as hickory or applewood. Once the smoke begins to emanate, place the tray with the chops in the smoker.

These chops require smoking for 45 to 90 minutes, depending on their thickness. For a perfect result, smoke them for an hour. If you have a meat thermometer, remove the chops when their internal temperature reaches 70°C (158°F).
9. Remove the smoked pork chops from the smoker, brush them once more with barbecue sauce, and serve them alongside mashed potatoes and steamed green beans.
